Cuando uno habla de gambas, piensa en una gran variedad de especies, pero la m\u00e1s conocida y la m\u00e1s habitual en nuestra alimentaci\u00f3n es la gamba de altura (lat. Parapenaeus longirostris<\/em>).<\/p>

La gamba de altura es de color gris-rosa. Cuando es viva, tiene manchas marrones. A veces suele ser de color verde y marr\u00f3n oscuro. Come peque\u00f1os organismos y carro\u00f1as. Durante el d\u00eda est\u00e1 hundida en la arena. Vive en el fondo arenoso y lodoso hasta le profundidad de 500 metros.<\/p>

Seg\u00fan los hist\u00f3ricos de gastronom\u00eda, la gente de la antig\u00fcedad consum\u00eda las gambas que se preparaban de diferentes maneras.El mismo nombre de las gambas viene del siglo 14, del nombre ingles shrimps<\/em>, nombre alem\u00e1n schrempen<\/em> y del nombre del n\u00f3rdico antiguo skorpna<\/em>, que quiere decir encogerse. Su cuerpo es compuesto de artejos que se posicionan uno por debajo del otro, por lo que aparecen encogidas. Las gambas pertenecen a la clase de Malacostraca<\/em>. Los miembros de esta clase tienen un cuerpo simple, una c\u00e1scara peque\u00f1a que comprende la cabeza y el pecho, y tienen un abdomen musculoso para la nataci\u00f3n y el exoesqueleto fino y ligero.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

Valor energ\u00e9tico y de nutrientes<\/strong><\/p>

El valor energ\u00e9tico de 100 g de gambas frescas es de 85 kcal\/356 kJ. Contiene 20,1% de prote\u00ednas, 0,51% de grasas y 0% de hidratos de carbono. En cuanto a los minerales, las gambas contienen calcio (54 mg, que corresponde a 7% de IDR), magnesio (22 mg que corresponde a 6% de IDR), f\u00f3sforo (244mg que corresponde a 35% de IDR), zink (1 mg que corresponde a 10% de IDR), cobre (0,2 mg, que corresponde a 20% de IDR) y selenio (30 mg que corresponde a 54,5% de IDR).<\/p>

En cuanto a las vitaminas, las gambas contienen niacina (1,8 mg que corresponde a 11% de IDR), vitamina B6 (0,16 mg que corresponde a 11% RDA), \u00e1cido pantot\u00e9nico (0,3 mg que corresponde a 5% de IDR) i vitamina B12 (1,1 mcg que corresponde a 44% de IDR), \u00e1cido f\u00f3lico (11,4 mcg que corresponde a 6% de IDR), vitamina A (24 mcg que corresponde a 7% de IDR).<\/p>
